Question 1

How do I convert fresh yeast to instant dry yeast?

Accepted Answer

Divide fresh yeast weight by 3.2. Example: 32g fresh yeast ≈ 10g instant dry yeast (or 17g fresh ≈ 5.3g instant). Use the converter above to swap grams, teaspoons, or tablespoons.

Question 2

How do I convert instant dry yeast to active dry yeast?

Accepted Answer

Multiply instant dry yeast grams by 1.3344. Example: 10g instant dry ≈ 13.3g active dry. Instant dry is more concentrated than active dry.

Question 3

How many grams and teaspoons are in a standard packet of yeast?

Accepted Answer

A standard 1/4 oz yeast packet weighs 7g (about 2¼ teaspoons). About 3g of instant dry yeast is 1 teaspoon, and about 3.84g of active dry yeast is 1 teaspoon. Fresh (cake) yeast should be weighed in grams, not scooped.

Question 4

When should I use yeast conversion vs the Leavening Calculator?

Accepted Answer

Use this Yeast Conversion Calculator when a recipe already lists a yeast amount and you need to swap Instant Dry, Active Dry, or Fresh. Use the Leavening Calculator to size yeast or starter from fermentation time and temperature.
