My Best Sourdough

This recipe has been on my website for many years and is still a favorite. Countless tests and trials culminated in the bread I was after: a loaf with a glossy and custard-like interior with mild lactic sourness, and a decidedly crispy crust with toasted grain and malty notes. The exterior of the loaf is usually more wabi-sabi in its expression: the high water content means less rigidity and structure, so the score isn’t sharp and precise, but rather more of a relaxed opening.
